Riesling holds a special place in the heart of Sarah - she worked as a winemaker in the Clare Valley for 5 years, as well as in Germany. Needless to say, when we were offered fruit from some of the oldest vines in Waipara, our favourite NZ region for Riesling, she was very excited!
Very mature vines, grown on the Glasnevin gravels near the Waipara river, the fruit was handpicked and gently crushed. It was allowed to ferment naturally in tank for 3 months, until the desired sugar to acid balance was reached. It was then matured on its lees in old barrels for 12 months to build midpalate texture.
The resulting wine is intensely aromatic with bright green apple and white florals, while the palate shows juicy grapefruit with complexity from the barrel aging. It also has the classic Waipara pithy, chalky acidity and texture. It has 8g/L residual sugar, leaving the finish dry and fresh.
