Dry ,elegant, and crisp, offering expressive aromatics and a true sense of providence.
A very pale pink in the glass with aromas of raspberry, cherry, strawberry and peach, with florals of rose blossom, violets, and a touch of tarragon and cucumber. The mixture of berry and stone fruit continues on the palate, with a hint of sweetness giving weight to the mid palate, balancing a Yuzu citrus backbone.
Pinot Noir for this wine was hand harvested on the 22nd March 2025. The fruit was whole bunched pressed, with the resulting juice being cold settled overnight and then fermentation started. The key focus of this wine was on maintaining the fine and fluffy lees (sur lie) post fermentation. The wine was kept with the lees in suspension to add savoury and brioche notes as well as to soften the acidity. This wine highlights the potential for a well structured clone of Pinot Noir to show savoury and salinity notes reminiscent of the great roses of southern France.
