A native of the Loire Valley, Olivier Pithon grew up in the vines, his Grandfather was a winemaker and his older brother, revered winemaker Jo Pithon, settled on the hillsides of Layon when Olivier was 4. After learning his craft in Bordeaux, Beaujolais and Jurancon, Olivier settled in the village of Calce where he purchased his vineyard. The domain was certified organic in 2002 and biodynamic in 2010.
Olivier firmly believes that great wines are made in the vineyard. His wines reflect the uniqueness of the terroir and the grapes, and his philosophy made him one of the top producers in Roussillon.
This cuv?e is the result of a partnership with half a dozen winemakers from neighbouring villages who also practice organic agriculture or who are converting to organic. It is a wine to drink with friends, in the sun, while eating a pleasant meal. Fruit, roundness and pleasure.

Grapes: Grenache Gris, Grenache Blanc, Macabeu.
Terroir: Limestone clay marl and schist soil.
Grape Growing: Organic and biodynamic grape growing with one simple rule: making wine the most natural possible and in the respect of the environment.
Winemaking: Direct pressing. Fermented with indigenous yeasts and aged in stainless steel tanks and demi-muids for 8 months.
This fruit-forward and palate-coating white wine show flavors of juicy pear, stone fruit, honey, verbena and wet rocks.
Best served with rich fish dishes, bouillabaisse and fresh cheeses.
