This Pinot Noir has a lifted and aromatic nose of red berries, baking spice and a rich and textural palate full of juicy red plum, blackberry and subtle French oak spice.
The Deliverance Pinot Noir is wild fermented in small lots and handled traditionally. The fermenters warm slowly, allowing complexity to develop, and manually plunged for natural colour and tannin extraction. The young wine macerated on skins for four weeks before pressing to French oak for natural malolactic fermentation and maturing for 10 months before blending and bottling onsite.
