Mount Edward's winemaking is traditional in the sense that they use natural yeasts and minimal intervention. They believe that the less they do to a wine the better the result so their aim is no fining, filtration, aids, additives or intervention. Of course there is a human element to winemaking, and a definite understanding of science is needed, which they get! Their winemakers just think that the less you interfere the better the result.
