Hebe "Red" is a naturally made organic wine. Made using handpicked Pinot Noir grapes it encompasses the terroir of the Southern Valley Vineyard and natural winemaking.... nothing added and nothing taken away. 10 % whole cluster wild ferment with indigenous yeasts from the vineyard and gentle hand plunging. After fermenting and maceration on skins, the wine was pressed off to Puncheon and barrique where it finished its malolactic fermentation and was left to settle before being racked into a tank pre-bottling in late August + 10 ppm PMS. These wines are unfiltered and un-fined. All yeast and bacteria come from the grape and the fining comes from its time on its own discarded yeast cells in a barrel
