This single vineyard Sauvignon Blanc is from our Saint Maur Vineyard in the Southern Valleys and is a true expression of the land.

With Minimal intervention winemaking, this Sauvignon Blanc was naturally fermented and aged for 14 months on yeast less in concrete egg tank and clay amphora. Unfined and Unfiltered with low Sulphur , the wine was then aged in bottle for a further 16 months before release
Resulting in a beautiful wine with defined notes of almond, citrus, lemon thyme, green olive. The palate is complex with lemon, salt, cream, very textural, finely structured and brilliantly focused.
