Syrupy-sweet and full of raisin flavour, the Pedro Xim?nez grapes are literally raisined by laying on straw mats in the sun for several days. Deep, rich and complex this is delicious with dark fruitcakes, chocolate desserts or - don't tell any wine snobs - simply poured over ice cream.
