Daftmill is a true farm distillery, owned and run by the Cuthbert family in the Lowlands of Scotland. Operating only during the farm’s quieter midsummer and winter seasons, the distillery produces just 100 casks per year on average. The distillery’s unique approach means that Francis Cuthbert is just as likely to be found tending the estate’s fields of barley as he is overseeing the stills.
This special whisky starts with Publican barley grown in the 43-acre field of the Daftmill estate. Harvested by John and Sandy in late August 2009, the barley was dried and stored on-site before being malted in Alloa during the summer of 2010.
Distilled during Daftmill’s summer season, this whisky was filled into a first-fill ex-Bourbon barrel from Clermont Springs on August 2, 2011. Now, after over 12 years of careful maturation, it has been bottled in January 2024 exclusively for New Zealand, offering whisky lovers here a taste of Daftmill’s craft at its finest.
Tasting Notes Nose: Bright and inviting, with yellow and green fruits, hints of lemon barley water, olive oil, and a soft waxiness. Delicate floral honey, fruity muesli, and candied fruits emerge with a drop of water.
Palate: Rich and concentrated, carrying through the fruit-forward notes from the nose. Layers of citrus marmalade, tropical hints of pineapple and papaya, and a warming, peppery spice. Subtle cider apple funk and a waxy depth keep things complex. Water amplifies the fruit and adds a luscious, almost syrupy texture.
Finish: Long and lively, with notes of pineapple, juniper, sweet olive oil, and a refreshing touch of lemon balm.
