The  fruit was whole bunched pressed, with the resulting juice being cold settled  overnight and then fermentation started. The key focus of this wine was on  maintaining the fine and fluffy lees (sur lie) post fermentation. The wine was kept with the lees in suspension to add savoury and brioche notes as well as  to soften the acidity.
