Just up the road in Christchurch, our friends at Yumesato Farm make umeboshi. A traditional Japanese condiment made form spray-free ume plums and organic sea salt. There are a variety of ways to consume it, but as ever, we chose a liquid form. Emerson's Umeboshi Gose is slightly salty, subtly sour, and fully-refreshing.
